Our dream of making the first whisky in the City of Parramatta seemed impossible in 2020. 

First step - establish a distillery. Easier said than done, but it happened, and we began trading in November 2021. We were officially opened as the first distillery in the City of Parramatta by then, Lord Mayor, Steven Issa, despite the 72 conditions that local council imposed on our development application.

Being disengaged from social media meant that the only way we could tell the world about our new distillery was by way of our legal obligation to alert locals of our intent to establish a potentially "hazardous and offensive" business (Section 72).  

Though successful up until this point, we always knew that whisky would be challenging given our 72 square meter bond store. But we made the commitment to put new-make spirit into casks within the first 12 months of opening. We did it 8 months later with a goal of making the best single malt whisky possible, in the two-year minimum that the federal government permits us to age whisky. 

While waiting and amidst global financial turmoil, we developed the rest of the 72 Range, including 72 Conditions Vodka and Section 72 Gin. Each product has its own unique story and embodies our vision of offering the people of Greater Western Sydney exceptional, accessible and affordable products, crafted right in their own backyard.
 

All of this while winning multiple awards for our top shelf grape-based brands- Renegat Ultra-Premium Vodka, Dovetail Artisan Gin, and Pisco-Esque. It is the Legacy of The Primary Goods Company that paved the way for who we are now. The Parramatta Distilling Co.

We are makers at heart and very proud to supply the spirit of the west. So, next time you’re at your local and you order an Old Fashioned or a Vodka, Lime & Soda or a Gin and Tonic… you’ll probably be drinking something made by us. And if you’re not, ask the question why?
